Guard beer is a type of high fermentation beer from northern France. Typically refermented in bottles of champagne (on the farm in particular) or in vats, at very low temperature, it could then be preserved more, and ripen while being refined. In fact, it has often become a low fermentation beer now. Amber, blonde, golden or brown, it has a marked taste and a high alcohol content. A muzzled metal plug is needed to contain the effects of the second fermentation in the bottle. edit code
