Savatiano

The Savatian is a white grape used mostly in Retsina wine. It is one of the most widely planted Greek grapes. It is known for its resistance to drought. It is planted mostly in central Greece, and is especially abundant in Attica, near Athens. In retsina, the low natural acidity of the grape is sometimes compensated by mixing it with the assyrtiko and the rhoditis. Regions

In addition to Attica, the variety is also found in Euboea and in the Bulgarian city of Pomorie, where it was used in a Greek colony called Anchialos. Although the grape usually mixed with the Salvatian in Attica is the assyrtiko, in Euboea and Pomorie usually mixed with the rhoditis. In Kantza, a village in eastern Paiania, a monovarietal Savatian wine is made that does not have the pine resin of Retsina wine.
