Sōng gāo (Chinese: 鬆 糕, literally "loose pie") is a typical appetizer of Shanghai cuisine made with rice flour, sugar and water, which has azuki beans embedded. In its upper part are embedded giant azuki beans colored in pink, while inside it carries normal-sized beans. The cake also has a filling of anko (sweet bean paste azuki). This large round dessert is steamed and cut into portions to serve it. Madame Chiang Kai-shek, who loved to eat sōng gāo, had the Grand Hotel in Taipei include her version of the cake on the menu, which is still offered today.
