Prolamins are a group of plant proteins with high proline content. It is found in cereals, receiving various names depending on it: gliadins in the case of wheat, hordeínas in barley, secalinas in rye and avenine to oats. In general they are only soluble in alcoholic solutions. Some prolamins, in particular gliadin and the like found in plants of the family Triticeae, (they are part of the gluten that is the main protein of this group) seem to be involved in celiac disease in those genetically predisposed individuals.
