The Céressou, which the IGN writes Célessou, is an isolated hillock of volcanic origin located in the department of Hérault. It is located east of Fontès, on the volcanic alignment that goes from the Escandorgue basalt mounds around Pezenas and the mountain of Agde.

The Couerou rises 207 m above the Boyne Valley and is locally known as a "mountain" landmark; There is an appellation of Côtes du Cauvers wine from 14 towns including Paulhan, Aspiran and Clermont-l'Hérault and the Aspiran winery also bears his name.
