Mutage, etymologically means that the must is made "mute".

Discovered in 1258 by Arnaud de Villeneuve (doctor), mutage is the operation which consists in preventing or stopping the alcoholic fermentation of a must by two methods:

This has the effect of inhibiting yeasts and consequently stopping the alcoholic fermentation while preserving the sugars and completing the alcohol content of the must.

Mutage is used to obtain mutated wine: liqueur wine and natural sweet wine.
