Romeritos (Mexican food)


The Romeritos (Suaeda calceoliformis) is a dish of Mexican cuisine, consisting of the leaves of the Romerito, a quelite that grows in the milpa and that should not be confused with the rosemary, and served in mole, usually soft poblano special prepared with shrimp powder, with Nopal, shrimp and potatoes, accompanied with dry shrimp cake. They are traditionally served at Christmas, mainly in the central region of Mexico.

In the states of Puebla and Tlaxcala also uses the species Suaeda pulvinata, which does not grow on agricultural land, if not a lacustrine plant.
