A rotisserie (Italian rosticceria or French rôtisserie) is a restaurant that roasts meat on a skewer or spinning spit in front of a heat source in the form of a flame or embers. Rotation makes the roast homogeneous and cooks the piece in its own juices as it rotates. Historically the skewers were turned by hand or by means of a clockwork mechanism, today the turn is driven by electric motor.
