Queso de l'Alt Urgell and the Cerdanya


Queso de l'Alt Urgell y la Cerdanya (from the High Urgel and Cerdaña in Spanish) is a cheese from Frisian cow's milk with protected designation of origin. It is made in the factory of the Cooperative Cadí in the Seo of Urgel, and the milk comes from companies ramaderas of the municipalities that integrate the Pyrenean regions of the High Urgel and the Cerdaña, of the provinces of Lérida and Gerona.

It has a cylindrical shape, with a diameter of between 195 and 200 millimeters in total and a weight around two kilograms and a half. The bark is natural and has a light brown color. The paste is cream colored with abundant small and irregular eyes. The texture is tender and creamy. The taste is smooth.

This area has traditionally been dedicated to livestock since the beginning of the 20th century. The dairy surplus was dedicated to the making of cheese, first of artisan form, soon industrially.
