Zacuscă is a vegetable dish very popular in Romania as well as other cuisines in the Balkans. Characteristics and elaboration

The main ingredients are aubergines, roasted red pepper (belonging to a local variety of cultivation called "gogoşari") and chopped onion and tomato sauce. Some cooks add zucchini instead of aubergines and mushrooms. The ingredients depend on the tastes and traditions, the inclusion of different species as well. Each cook has his own recipe. Traditionally, families after harvesting obtained a large amount of vegetables and put them in sterilized jars to be consumed little by little during the winter.
