Moors and Christians, Moors or congrí rice is a Cuban recipe made of rice and black beans.

It should be noted that the name congrí rice applies to the dish made with red beans, while the one made with black beans is called Moors and Christians or Moors with Christians or simply Moors. Preparation : Moro de gandules

The dish is usually prepared by cooking black beans in a good amount of water without becoming completely soft. In another bowl put uncooked white rice and prepare a fried garlic, onion, oregano, cumin, bay leaf and green pepper or chili peppers (you can put fried pork or chicharrones in bits). Pour over the raw rice and add the broth of the black beans along with the grain, the amount of water should always be more than the amount of rice without becoming double. It is cooked first with a normal fire, when the broth begins to boil the fire is lowered until it dries. It is advisable to dry it with albal (aluminum foil) or a nylon bag to keep the steam that gives the end point to the rice. Do not stir until dry, preferably with a fork, to separate the beans. It is a very typical dish of family celebrations and gatherings throughout the Caribbean.

The cacots are used in the typical Dominican dish called Moor de Gandules, which is usually prepared with or without coconut and fish.
