Traditional pastor is a type of cooking meat from Mexican cuisine. It is composed of pork cooked on a spit, in the same way as Turkish meats in döner kebab.

It is mainly used in tacos, but can be found in different Mexican dishes.

Pastor means "shepherd" in Latin, which explains the origin of the word "pastor" in French and pastor in Spanish, and thus means originally "meat cooked in the manner of shepherds."
