Smažený sýr (in Czech literally 'fried cheese') is a Czech dish based on cheese. It consists of a slice of cheese, usually Edam, about 15 mm thick, covered successively with flour, egg and breadcrumbs and then fry in a frying pan or fryer. It is often served with a salad of red cabbage, potatoes (which may be potato chips or mashed potatoes), and usually tartar sauce or mayonnaise. In Czech fast-food restaurants it can also be served in the form of a sandwich, ie between two slices of bread, usually in a type similar to that of hamburger.
